In the Philippines, the traditional salt-making industry in Cavite is on the brink of extinction, with only three salt farms left in Noveleta and Kawit. Salt makers like Rolando “Ka Olan” Palustre, 63, have practiced the craft for 45 years, earning an average of P20,000 per five-month production period from January to June. They rely on intense solar heat to crystallize seawater into rock salt, but frequent typhoons and rains have shortened the season from six to three months, reducing harvests from over 1,000 sacks in the 1980s to just 400 sacks today. This has driven prices up from P70 per sack in 1990 to P250 currently.
