A new wave of Michelin-starred sushi restaurants in Paris, including Hakuba, Hanada, Sushi Shunei, Sushi Yoshinaga, and L'Abysse, are redefining the city's sushi scene by serving exclusively omakase tasting menus that blend Japanese techniques with local ingredients. These establishments, with prices often exceeding €300, attract international clientele and proudly claim a Parisian identity. This marks a shift from the past, when sushi in Paris was a discreet affair limited to a small area between the Palais Royal and the Opéra Garnier, frequented mainly by the Japanese community and tourists, including fashion icons Hanae Mori in the 1970s and Kenzō Takada in the 1980s.
