Facing increasingly frequent droughts and heatwaves, four farmers in Bas-Rhin, Alsace, have shifted from traditional crops to pulses such as lentils, chickpeas, and quinoa. Led by Cédric Steinlé, who began the transition during the COVID-19 pandemic six years ago, the group formed a small cooperative and launched the brand "Graines d'Alsace." They now produce over 100 tonnes of pulses annually, double their output from three years ago, and have expanded to include chia seeds and red beans. The initiative aims to offer local, sustainable produce that was previously uncommon in the region.
