Kathal Ki Sabzi, a popular vegetarian dish often referred to as the "meat of vegetarians," is a staple for Holi celebrations in North India, offering a spicy and aromatic complement to festive meals. This article provides a straightforward recipe for preparing the dish at home, requiring ingredients such as 500g of raw jackfruit, onions, tomatoes, ginger-garlic paste, mustard oil, and a blend of spices including cumin seeds, turmeric, red chilli powder, coriander powder, and garam masala. The preparation involves cubing and parboiling the jackfruit, then shallow-frying it before sautéing onions and tomatoes with spices. The fried jackfruit is then added, simmered in water for 15-20 minutes, and finished with garam masala and fresh coriander, making it ready to be served with accompaniments like kachori or poori.
