The Bayeux pig, a rare breed known for its exceptional meat quality, will be showcased at the Paris Agricultural Show, despite the absence of cattle due to contagious nodular dermatosis. Christelle Marie, a breeder from Valambray in Calvados, will present "Valseuse," a two-year-old, 150 kg sow, to represent the breed's distinctive characteristics: white skin with black spots, cap-like drooping ears, a crest on its back, and a broad forehead and snout. While no competition will be held for this low-population breed this year due to a lack of participants, the exhibition aims to highlight its importance. Marie, who established her Bayeux pig farm in 2019, manages a small herd of three sows and one boar, contributing to the breed's preservation alongside six other local French pig breeds.
