Three associates, Xavier Nizard, Fabian Trapani, and Céline Marciano, have created a new sweet specialty for Toulouse called "La Briquole," aiming to achieve the iconic status of Bordeaux's cannelé. Inspired by the city's characteristic brick architecture, the Briquole is a small, brick-shaped confection featuring a crunchy coating and a soft, lemon-infused biscuit. Measuring 6 cm by 3 cm by 2 cm and weighing 31 grams, the name itself is a playful nod to Toulouse. The confection is produced in the workshops of chocolatier Cacaofages in the Saint-Cyprien district and is available for purchase in concept stores in Toulouse and Balma-Gramont, with plans for expansion and click-and-collect ordering starting March 1st.
